Formerly the creative producer at the Obie Award-winning Flea Theater in the Tribeca section of Manhattan, she is now a freelance writer, producer, and frequent guest speaker. Simon is the recipient of a 1999 grant from the Federation of Families for Children's Mental Health.

In my purse, I always have a plastic bag, and if we can't finish meal, I just dump it in my purse. This works very well except if you're eating ribs, lobster, or clams. Then the waitress comes over and there's nothing on the plate, and you say, boy, those bones and shells, I loved 'em!
