Bill Buford is not a chef. He's a writer, who writes profiles for the "New Yorker." But one of his profiles turned him into a chef, for a while, at least. When he set out to profile famed chef Mario Batali, Buford became Batali's apprentice, of sorts, and eventually found that he had become a kitchen insider. His book is called "Heat."
